When press home button will open googel, how if I want change to open another app?

setting-->default apps-->assist&voice input

you can only change to other assist app or turn it off

hope it can add a double click home button get split screen features

The home button will show Google Assistant only when you long-press on it. It has other functions you can read about here:

If you want to change the behaviour of the home button totally, you might need to install a 3rd party launcher from Google Play store (like Nova Launcher, for example).
